MEADOWLARK FARM WINTER CSA NEWS 12-5-08 Dear winter share friends Can you believe all of this snow? It seems that in the last week we've seen so many different forms that snow takes from the magical fairy kind that coated each branch of every tree and bush with a layer of icing to the thick and wet snow that loves to be made into snow men and snow forts, to the corn like snow of yesterday. The Lake in all of her glory creates and disperses. Yesterday Jon loaded up the toboggan and slipped on snow shoes to head up to our farthest gardens, the "G" gardens on the hill to check out the state of the Brussels sprouts. We had every intention to give them out for the thanksgiving share, but the weather kept us so busy for days just keeping all of the precious veggies above freezing that we didn't have time. Knowing that they are now covered by 2 feet of snow didn't deter jon; I was feeling ready to let them go until the snow melted, he was feeling ready for a challenge. Armed with a snow shovel, he set to work uncovering the hidden and frozen beauties. Unfortunately, the task was more than we were up for! We hope that your thanksgiving was all that you had hoped for and more. Ours was a lovely blend of family and yumminess. Hopefully your meadowlark veggies played a part in your production. Today's boxes? 5# of yellow onions, garlic, shallots, Nicola yellow potatoes, carrots, rainbow beets,rutabaga,celery root and buttercup winter squash and 2 delicata. For greens today we have lots! Spinach, lettuce mix, red Russian kale(jagged edge and pinkish veins), rainbow chard for all and for extras more spinach, beautiful little salad greens and green curly kale. Herbs are oregano and thyme. Try this homey, satisfying dish to warm your souls. COLCANNON -3 medium sized potatoes -2 t. salt, divided more to taste -1# kale or cabbage -1 c. chopped leeks or scallions -1 c. half and half or whole milk -1/2 c. butter, melted Put whole potatoes in large pot, cover with water and bring to a boil. Add 1 t. salt and boil until tender, 15 or so minutes. Drain potatoes and mash. Put in a ovenproof dish and keep warm in 200 oven. Meanwhile, put kale in pot, cover with water and bring to a boil. Add remaining 1 t. salt and cook until kale is tender. Drain and finely chop kale. Place leeks in a small pot, cover with half and half or milk and cook over low heat until very soft, 15-20 minutes. Add kale to warm potatoes and mix well, then add milky leeks. Taste for salt and pepper. Spoon a little of the melted butter over each serving and serve hot. We are feeling the heaviness of the snow today carrying news that our beloved friend Kathy Rowe has passed on. Her love and light and creative, giving soul will be greatly missed by our family and community. Our sweetest thoughts carry out to her family.
