Hello dear community of meadowlark,

    And the rains came ddown... we are thankful for the deluge, but are always slowed down by the rain. We are grateful for the barn and the space it offers for boxes and we are also excited to pass along lots and lots of tomatoes you way today. We hope that you will find many delicious and creative ways to use them, and if you're looking for a great idea, try oven roasted sauce.

    A reminder to old meadowlarks and hopefully an inspiration for new meadowlarks, the oven roasted sauce is easy, delicious and is a great way to use a lot of tomatoes at one time. Slice tops of tomatoes off and cut out funky rotten spots. Slice thickly and place slices in a well oiled roasting pan (olive oil please). Set oven at 300 degrees. Slice and layer and sprinkle with olive oil, kosher salt, leeks are great and so are onions, garlic, thyme, basil and any combo that sounds good to you. We tend to go plain, with kosher salt. Roast the tomatoes in the oven until they are brown and crispy on top and many of the juices are evaporated. Don't overdo it, but don't be surprised if hours pass by. You can get away with sticking a large pan in the oven overnight (lower the oven temp 25 degrees) to roast and awakening to the smell of roasted tomatoes. Let this mix cool, then use a food processor to make the best sauce in the world. You'll neven can tomatoes on the stovetop again! This pasty, complex sauce is great in salsa and straight up as a delicious pasta sauce. You can can it or freeze it easily. Give it a try!

    We have canning tomatoes available for sale now and are accepting offers gratefully. Tomatoes are $15/half bushel and $30/bushel. Consider taking some time for you and your family to put some tomatoes by for winter.     Boxes this week: salad mix, shallots, sweet onions, Chioggia beets with greens, cukes, zukes, heirloom and other tomatoes, green pepper, Yukon gold potatoes, green beans, eggplant, Italian flat leaf parsley and for fruit shares, blackberries, pears and yellow plums.
